There is "OUHARA" in the northern part of Kyoto-shi.AIt is the famous place where there are a "SANZEN-IN" temple or a "JYAKKOU-IN" temple.

An origin of "SHIBADUKE"

There was power to divide Japan into two in about 1185.The name was a family of "TAIRA" and "MINAMOTO".Two opposed families did the last fight at the "SETONAIKAI" straits on April 25.(DANNOURANOTATAKAI)
I left capital (KYOTO), and princess "KENREIMONIN" of the "TAIRA" family who lost by this fight came to live in a temple of "OOHARA".
It was "SHIBADUKE" that the villager who watched the figure which the brilliant "KENREIMONIN" princess who lived grieved at the capital until yesterday presented.

An origin of a name of "SHIBADUKE"

The old days, the villager of Ohara sold firewood (SHIBA) at the capital.I call the pickle which I sold at the time "SHIBA-DUKE".

The recipe of "SHIBADUKE"

Raw materials are only a produced eggplant and the perillas which they can cultivate only in Ohara this year.

I am slightly thicker and mix Siso and salt with the eggplant which did slice.
A basis is 10% in 90% Siso in an eggplant.Salt is 7%.
By your preference, please add a cucumber, myouga, a blue red pepper.

I put raw materials in a barrel and put a cover on the top and put a stone.
Water comes out of an eggplant when it passes for approximately 1 hour.
It becomes a little a capacity finally.

I begin lactic fermentation when I put it in a cool site for about 1 month.
A color of an eggplant turns into clean purple.
